Exceptional Estate Selection
In FrontStreet Coffee's bean selection, we have chosen only one estate-grade coffee bean from Brazil. This is because Brazil predominantly uses large-scale mechanical cultivation, with estate cultivation models being extremely rare, and excellent coffee estates are even scarcer. Fortunately, Fazenda Rainha (Queen's Estate) from Mogiana is precisely such a top-tier estate.
Fazenda Rainha belongs to the Carvalho Dias family and has been operating for over 116 years. Located in the mountainous region of São Paulo state near the Minas border, at elevations ranging from 1,200 to 1,400 meters, the estate enjoys abundant annual rainfall of over 1,800mm without excessive flooding. The average annual temperature is only 19°C, causing coffee cherries to grow slightly slower but with denser texture. Although production is smaller, the aroma and flavor are unmatched by ordinary Brazilian highland beans. This estate primarily grows Bourbon varieties, including over 110-year-old heritage Bourbon trees.
Legacy of Excellence
Fazenda Rainha is owned by the renowned and respected Carvalho Dias family. The family's four major estates have won awards every year since the first Brazil Cup of Excellence competition in 1999, winning more than 12 times in 7 years. In 2004, they even swept the championship, 9th place, 11th place, and more. Many Brazilian estates, large and small, have hoped for years to qualify for awards, yet this family's estates have consistently won multiple prizes. Even Fazenda Rainha, purchased by O'Sher, has an impressive record: 2nd place in 2000, 3rd place in 2001, and 29th place in 2005. To date, Fazenda Rainha has won awards three times.
The Carvalho Dias family is also a founding member of the Brazilian Specialty Coffee Association, and their commitment to coffee quality and environmental protection is evident. Within their farms, they utilize natural waterfalls to develop pollution-free hydroelectric power, making them self-sufficient in electricity needs (another of their award-winning estates is named after this waterfall - the Waterfall Estate). They have built churches, classrooms, nurseries, and medical stations, maintaining original native forests and continuous reforestation efforts.
Regarding Fazenda Rainha specifically, environmental protection is thorough. Due to the higher elevation and non-flat terrain, machines cannot be used for harvesting - all cherries are picked completely by hand. They cultivate low-yield, high-quality Yellow Bourbon variety. Yellow Bourbon is a variant of Bourbon coffee - while regular Bourbon cherries turn red when ripe, Yellow Bourbon cherries turn yellow. Additionally, through cupping comparisons, Yellow Bourbon coffee demonstrates better sweetness and mouthfeel than regular Bourbon coffee.
Meticulous Processing Methods
In addition to cultivating Bourbon varieties, Fazenda Rainha's meticulous and thoughtful processing methods are another key to its exceptional quality: refined natural processing.
Ripe coffee cherries are hand-picked into cloth bags to avoid contact with the ground. All cherries harvested on the same day are immediately sent to the estate's processing facility for pulped natural processing. Using hand-picking and cloth bags is to prevent earthy flavors and any improper fermentation. When these harvested cherries arrive at the processing facility, they immediately undergo floating selection: cherries are washed, and unqualified or dried fruits are filtered out based on bean size. Qualified beans are spread evenly on raised drying beds, with constant turning to ensure uniform drying.
Additionally, the estate is equipped with drying machines. If continuous cloudy and rainy weather occurs, the drying machines are used for drying.
Flavor Profile and Applications
Specialty-grade Brazilian coffee beans are characterized by low acidity and rich body. After roasting, they present notes of nuts, cocoa, chocolate, and toast, with a smooth, balanced, and clean mouthfeel. Therefore, they are often used in espresso blend formulations to provide a supporting and balancing role. FrontStreet Coffee offers four espresso beans, three of which are based on Brazilian coffee, resulting in espresso with rich golden crema and intense roasted hazelnut aroma. When made into Americano, it's rich and aromatic, and when combined with milk for lattes, it presents a creamy, smooth texture.

Method: Three-pour technique
Brewing Process
First pour: Inject 30ml water and bloom for 30 seconds
Second pour: Circle pour 100ml water, when the water level drops to half
Third pour: Circle pour 95ml water
End extraction when the dripper finishes dripping, total extraction time about 2 minutes
