Brewing Instructions

Hand-pour Morgan: Use 15g of coffee grounds, medium-fine grind (Fuji mountain ghost tooth grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water and let it bloom for 27 seconds. Continue pouring to 105g and pause. Wait until the water level drops to half before continuing to pour. Slowly pour until reaching 225g total. Avoid the tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.

The Story of Geisha Coffee

The pronunciation of "Geisha" is the same as the Japanese word for "geisha," which is why it's also known as "Geisha coffee." Because the coffee plant grows taller than typical coffee trees, it was originally planted in a small area within the estate and used as a windbreak. It wasn't until the estate owner's son, searching for the best coffee varieties throughout the estate to compete in the annual Panama Best Coffee competition, that Geisha had its opportunity to shine. Since then, it has participated in various world coffee competitions and won a total of eleven championships.

The Geisha variety was discovered in the Geisha forest of Ethiopia in 1931 and then sent to the Coffee Research Institute in Kenya. In 1936, it was introduced to Uganda and Tanzania, and in 1953, Costa Rica brought it in. For a long time, Geisha didn't receive much attention until one day, Don Pachi first brought it from the small town of GESHA in southwestern Ethiopia to Costa Rica. Afterward, Geisha made its way south to Panama. Panama's Hacienda La Esmeralda separated it from other varieties, and it quickly won the national coffee championship.

Geisha possesses rich sweetness, an exceptionally clean mouthfeel, and complex aromas that range from berries and citrus to mango, papaya, and peach. A very distinct bergamot-like aftertaste is also one of its typical cupping characteristics. To this day, Geisha remains the champion among coffee varieties.

About Finca Morgan

Finca Morgan is located southwest of the "Baru Volcano," Panama's highest peak. The estate covers approximately five hectares, with an average of 2,000 coffee trees per hectare. Due to the growth characteristics of the plants and cultivation philosophy, only some coffee trees can produce coffee cherries each season. The coffee cherries undergo meticulous selection and processing, resulting in only a small amount of coffee beans reaching the market.

Finca Morgan is influenced by both Atlantic monsoon and Pacific monsoon climates, creating rich and diverse microclimates within the estate. The large temperature difference between day and night slows down the maturation of coffee cherries, allowing for more complete development and enhanced sweetness. Due to the high altitude, the estate's terrain is predominantly mountainous, with coffee planted on steep slopes, which adds to the difficulty of managing coffee trees and harvesting cherries. For coffee tree management, if a tree is found to have pest damage, the entire tree is removed and the soil is renewed to isolate the disease and protect other healthy coffee trees.

This has kept Finca Morgan's green bean prices at a high level in the market, with customers mainly being competition baristas within the coffee industry. These top baristas believe that whether a cup of coffee will be excellent is determined when it's still a green bean or even a seed.
