High-altitude coffee varieties feature uniformly large, well-proportioned coffee beans with a rich, mild flavor profile. Like Guatemala and Costa Rica, El Salvador's coffee is graded according to altitude—the higher the elevation, the better the coffee. It is divided into three grades based on altitude: SHB (Strictly High Grown) = highland, HEC (High Grown Central) = mid-highland, and CS (Central Standard) = lowland. The finest brand is Pipil, which is the Aztec-Mayan name for coffee. It has earned certification from the Organic Certified Institute of America.

Brewing Method
For pour-over Santa Rita: Use 15g of coffee, ground medium (using a Fujiogoshi ghost tooth grinder #4), with a V60 dripper at 88-89°C water temperature. First pour 30g of water and let it bloom for 27 seconds. Continue pouring until reaching 105g, then pause. Wait until the water level drops to about half, then continue pouring slowly until reaching 225g. Avoid the tail section. Use a water-to-coffee ratio of 1:15, with a total extraction time of 2:00.
