Hand Pour Over: FrontStreet Coffee's Brazilian Semi-Washed Bourbon

15g of coffee, medium grind (Fujiyama ghost tooth 4 grind), V60 filter cup, 88-89°C water temperature. First infusion with 30g water, bloom for 27 seconds. Infuse to 105g and pause, wait until the water level in the coffee bed drops to halfway before adding more water. Slowly infuse until reaching 225g total. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

The Bourbon variety originates from Bourbon Island or Ethiopia. It is susceptible to pests and diseases and has relatively low yields. Some data indicates that Yellow Bourbon has higher yields than Red Bourbon and Orange Bourbon, but Red Bourbon remains the most common variety. Bourbon has close genetic relationships with SL28, Typica, and Caturra. Because it produces lower yields in suitable environments, it often results in very high-quality cup profiles (evidence suggests that lower yields often lead to higher quality, as plants can more effectively absorb soil nutrients).

Typical Bourbon cup characteristics include low body, balanced flavor, and pronounced sweetness, making it an excellent base bean for espresso blends.

Catuai Variety

Catuai is a coffee variety resulting from artificial hybridization between Caturra and Mundo Novo. Catuai has good resistance to natural disasters, particularly wind and rain.

Catuai trees are relatively short compared to other coffee trees. Catuai fruits grow more firmly and are more difficult to harvest. The fruits come in both red and yellow varieties. To date, no evidence has been found that yellow fruits taste better than red fruits. In fact, some cupping participants have discovered that while coffee processed from yellow fruits may have good acidity, the cleanliness of the coffee's mouthfeel is inferior to that of red fruits.

Catuai was cultivated in Brazil and is now widely grown throughout Central America.

Brazil's Premium Coffee Regions

However, the Cerrado plateau in western Minas and Southern Minas mostly have altitudes above 1100 meters, with rich topography, distinct wet and dry seasons, large day-night temperature differences, and abundant microclimates. These conditions are suitable for cultivating elegant-flavored Bourbon and Yellow Bourbon, naturally making them Brazil's main premium coffee-producing regions. Additionally, Mogiana in northeastern São Paulo province also primarily focuses on shade-grown Bourbon, ranking alongside Cerrado and Southern Minas as Brazil's three major premium producing regions.

Brazil's terrain is generally flat, with most coffee farms situated at altitudes around 600-1000 meters. The flat, monotonous topography lacks microclimates, and the traditional practice of non-shade cultivation methods has led to the development of Brazil's unique soft bean flavor profile—low acidity, heavy nutty notes, chocolatey sweetness, good body, but with slight woody and earthy notes, while floral and citrus aromas are not prominent.

Minas Gerais state is located in the heartland of the Brazilian plateau in southeastern South America, producing more than half of Brazil's high-quality Arabica coffee.

The Santo Antônio do Amparo region, which recently won the 2016 Brazil Cup of Excellence award, belongs to the core producing area of Southern Minas, near the headquarters of the Brazilian Specialty Coffee Association (BSCA).
