Catuai

Catuai is a coffee variety that is artificially hybridized from Caturra and Mundo Novo. Catuai has good resistance to natural disasters, particularly against wind and rain.

The Catuai coffee tree is relatively short compared to other coffee trees. Catuai's fruits grow more densely and are not easy to harvest. The fruits come in both red and yellow varieties. To date, no superior taste has been found in yellow fruits compared to red ones. In fact, some cupping tests have revealed that although coffee processed from some yellow fruits has good acidity, the cleanliness of the coffee's taste is inferior to that of red fruits.

Catuai was cultivated in Brazil and is currently widely grown in Central America.

Panama Premium Coffee

Panama's premium coffee is grown in the western part of the country, near Costa Rica and close to the Pacific Ocean. The coffee produced in the Boquet district of Chiriqui province is the most famous, with Volcán, Santa Clara, and Candela also being well-known. Other regions include the David district, Remacimeinto district, Bugaba district, and Tole district. Only coffee grown at altitudes between 1300 and 1500 meters is considered specialty coffee.

"Catuai" is a hybrid of Mundo Novo and Caturra, making it a second-generation hybrid. It inherits the advantage of Caturra's short stature. The variety name Catuai comes from an indigenous language meaning "very good." As a member of the Arabica family, Catuai is relatively high-yielding.

Pour-over Panama Firestone Estate

15g of coffee grounds, medium grind (using Fuji's ghost tooth grinder at setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water and let bloom for 27 seconds. Pour to 105g and stop pouring. Wait until the water level in the coffee bed drops to halfway before continuing to pour. Slowly pour until reaching 225g total. Discard the tail end. Water-to-coffee ratio is 1:15, extraction time 2:00.
