Introduction to Blue Mountain Coffee
Blue Mountain Coffee refers to coffee brewed from coffee beans grown in Jamaica's Blue Mountains. It is categorized by grade into Jamaica Blue Mountain Coffee and Jamaica High Mountain Coffee. The Blue Mountain range is located in the eastern part of Jamaica Island. When the weather is clear, the sea surrounds the Caribbean, and direct sunlight hits the azure sea surface, the mountain peaks reflect the brilliant blue light of the seawater, hence the name. The highest peak of Blue Mountain reaches 2256 meters above sea level, making it the highest peak in the Caribbean region.
This area lies within the coffee belt, featuring fertile volcanic soil, fresh and unpolluted air, a humid climate with year-round fog and rain (average precipitation of 1980mm, temperature around 27°C). Such climate conditions have created the world-renowned Jamaica Blue Mountain Coffee, as well as making it the second most expensive coffee in the world.

Historical Background
Perhaps Jamaica Blue Mountain Coffee is the most famous coffee in the world, but actually few people know its history and why its price is so high. In 1789, the first person to introduce coffee to Jamaica Island was a Frenchman fleeing the French Revolution. The first cultivated coffee was intended to increase local French consumption and then export. Moreover, in the first 100 years, the local industry was very small.
However, in 1932, the Jamaican Conference passed laws encouraging coffee cultivation to reduce the island's dependence on sugar exports. For the quality assurance of Blue Mountain Coffee, modifications were made to the "Jamaica Coffee Industry" to standardize processing, improve coffee quality, equalize marketing, and save the fate of premium coffee. The Jamaica Industry Association took responsibility for the quality of Jamaica's Blue Mountain Coffee. Additionally, the island's abundant smaller coffee also grows well, and the association has final authority over Jamaica's coffee exports - all coffee must pass through the Jamaica Industry Association before being exported.
Production and Distribution
The shipment volume of Blue Mountain Coffee is extremely small. In 1717, French King Louis XV ordered coffee cultivation in Jamaica. In the mid-1720s, Jamaica's Governor Sir Nicholas Lawes imported Arabica seeds from Martinique and began promoting cultivation in the St. Andrew region. To this day, St. Andrew remains one of the three major producing regions of Jamaica Blue Mountain Coffee, with the other two being Portland and St. Thomas regions.
Due to Japan's continuous investment in Jamaica's coffee industry, most Blue Mountain Coffee is now controlled by the Japanese, who have also obtained priority purchasing rights for Blue Mountain Coffee. In 1992, Jamaica sold 688 tons of Blue Mountain Coffee to Japan, 75 tons to the United States, and 59 tons to the United Kingdom. Now, 90% of Blue Mountain Coffee is purchased by the Japanese. Since the rest of the world can only obtain 10% of Blue Mountain, regardless of price, Blue Mountain Coffee is always in short supply.

The "Secret" of Blue Mountain Coffee's Pure Taste
Their coffee trees all grow on rugged mountain slopes, making the harvesting process extremely difficult. Only local skilled female workers can handle this task. It's very important to select perfectly ripe coffee beans during harvesting, as underripe or overripe beans will affect the coffee quality. After harvesting, coffee beans must be hulled the same day, then fermented for 12-18 hours. Afterward, the coffee beans are washed and sorted. The next step is drying, which must be done on concrete floors or thick blankets until the coffee bean moisture content drops to 12%-14%. They are then stored in special warehouse stacks. When needed, they are taken out for roasting and then ground into powder. These procedures must be strictly controlled, otherwise, the coffee quality will be affected.

Identifying Authentic Blue Mountain Coffee
- Appearance: The raw beans of Blue Mountain Coffee are greenish-blue, very uniform in appearance, medium to small in size, with slightly raised ends. After roasting, they increase significantly in volume and become very full.
- Grinding: True Blue Mountain Coffee beans grow at high altitudes, and their cellular structure is relatively loose. When ground by hand, they feel very crisp, smooth, and continuous, without any sense of resistance.
- Aroma: The aroma is very rich and dense; so-called blended Blue Mountain coffee does not have this kind of aroma.
- Taste: True Blue Mountain Coffee has a balanced and rich taste, without any one flavor being prominent or lacking. This is also something that no other coffee beans can achieve, making it the most crucial identification point. Brewing Method
Hand-poured Jamaica Blue Mountain. 15g of coffee, medium grind (small Fuji ghost tooth blade grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for 27 seconds bloom, then pour to 105g and stop. Wait until the water level in the coffee bed drops to half, then continue pouring slowly until reaching 225g. Discard the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
