The Terroir of Baru Volcano

Baru Volcano is not only the highest mountain range in Panama, but the sedimentary materials created by early volcanic activities and eruptions have brought large amounts of extremely fertile soil. This soil is rich in nutrients, and the volcanic ash particularly contains abundant phosphorus and sulfur. Mixed with clay and combined with unique climate patterns, this region has formed an environment suitable for growing high-quality coffee. The dense forests and numerous species have created overall biodiversity.

Traditional Farming Practices

About 50 coffee farmers in this area form a small cooperative, all using traditional Boquete methods to produce coffee—letting coffee grow in a near-natural environment. Although the yield is not high, it can maintain a rich ecological environment, and soil quality can be maintained or even improved. Natural farming methods are not only beneficial to the environment; because coffee berries grow slowly, they are more likely to develop high-quality coffee beans with excellent flavor. Farmers manually harvest complete coffee cherries and send them to the nearby Cafe de Eleta S.A. for post-processing. The processing plant is about 4 kilometers from the farm and includes a modern laboratory for cupping quality control and manual sorting.

Brewing Method

Hand-poured Cupid. 15g of coffee, medium grind (small Fuji ghost tooth blade #4), V60 dripper, water temperature 88-89°C. First pour 30g of water, bloom for 27 seconds. Pour to 105g and stop pouring, wait until the water level in the coffee bed drops to halfway, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Panama's Coffee Heritage

Panama coffee originated in 1780 when European immigrants introduced the first Typica varieties. Located in Central America with natural advantages of sunshine, land, and mountains, plus an ample labor force, this region has become an excellent area for cultivating and producing high-quality specialty coffee—truly a paradise for nurturing coffee. In particular, Geisha variety coffee from Panama has led the global trend of focusing on specialty coffee, successfully attracting global market interest in Panama coffee.

The Boquete region is Panama's oldest and most famous coffee growing area, located on the eastern side of Baru Volcano, with an average altitude of about 1000-2000 meters. Among these, "Baru Volcano National Park" is an ecological conservation area with extremely rich biodiversity, featuring multiple microclimates. Combined with year-round mist and abundant rainfall, this creates excellent local cultivation conditions, giving Boquete coffee its unique aroma. It is Panama's region with the highest coffee production and best quality.

During each harvest season, coffee farmers use refined washed processing and sun-drying methods, ensuring the coffee beans are full and have pure flavor.
