Yirgacheffe itself is a small town with a population of about 20,000. The three neighboring small regions of Wenago, Kochere, and Gelena Abaya produce coffee with flavors almost identical to Yirgacheffe, so they are also classified under the Yirgacheffe regional category. Whether in culture or geographical environment, Yirgacheffe is similar to the nearby Sidamo, but Yirgacheffe seems to be particularly favored with uniquely advantageous conditions. Top-quality Yirgacheffe coffee features floral notes, bright citrus acidity, lemon-toned aromas, and a silky smooth mouthfeel.

Brewing Instructions

Hand-pour brewing for washed Worka: 15g of coffee, ground to medium-fine (Komachi grinder 3.5 setting), V60 dripper, water temperature 90-92°C. First pour with 30g water, let bloom for 27 seconds. Pour to 105g and stop, wait until the water level drops to half, then continue pouring slowly to 225g total. Avoid the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.

Compared to the traditionally sun-processed Harar region, sun-processed Yirgacheffe is not as common. As the region where Ethiopia's first washing station is located, coffee enthusiasts are more familiar with the washed Yirgacheffe, renowned for its elegant lemon and citrus characteristics.

Washed-processed coffee flavors are less likely to have wild characteristics, possessing pure and refreshing qualities, making them suitable for light roast levels. This washed Ethiopian coffee can achieve the highest G1 grade, which already indicates very few defects.

Origin Story

This coffee comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako Farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb district, established in 2005, and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year. It is known for producing high-quality sun-processed Yirgacheffe. The Worka Cooperative has approximately 300 coffee farmers. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.

Flavor Profile

Prominent floral notes, both dry and wet aromas feature rich citrus scents. The front stage presents lemon, kumquat, white grape juice, and other diverse flavors. The middle to back stages showcase rich citrus sweetness with soda-like rich sweetness. Distinct personality,突出, and quite rare to encounter.

In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest levels, so previously only Yirgacheffe WP G2 was commonly seen in the market.

Special Notes

Note: Yirgacheffe G1 was a grade specially requested by Mitsubishi from the Ethiopia Coffee & Tea Authority. It first appeared on the market in 2002-2003. G1 grade beans are not produced through general screening methods but are strictly hand-selected from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. The green beans are almost uniform in size, quite beautiful in appearance, and have almost no defective beans. After tasting, they better express the characteristics of Yirgacheffe. Due to the strict production process, the annual output of Yirgacheffe G1 is quite scarce, averaging around 600 bags.

Most Yirgacheffe coffee is processed using the washed method, fermented in washing tanks for about 72 hours to remove pulp, then dried directly outside the processing station. The green beans are manually selected, undergo quality inspection by the Ethiopian Coffee and Tea Authority, and are exported through competitive bidding. The annual production is about 225,000 bags (60kg each), previously mainly sold to Northern Europe (mainly Germany) and Japan, but recently has also been gaining attention in North America.
