Understanding Peaberry Coffee
Now, let me introduce PB, which stands for Peaberry—what we commonly call round beans. Typically, a coffee cherry contains two seeds, which are the common coffee beans we see—one side is curved and the other is flat, similar to the shape of a peanut. We call these flat beans. Peaberries, however, occur when only one coffee bean develops inside a coffee cherry, taking on an elliptical shape. They account for a very small proportion of the entire coffee tree's fruit. Peaberries are all selected one by one by hand, ensuring overall quality, so it's no surprise that they taste excellent.
Papua New Guinea Coffee Characteristics
Papua New Guinea's coffee production is not very high, and its coffee beans are all carefully processed washed Arabica beans. Generally, washed coffee beans are filled with bright fruit aromas but don't have strong acidity. Their characteristics include a silk-like smooth mouthfeel and wonderful aroma, with moderate acidity, making them a relatively rare coffee variety that combines high body with medium acidity.
Flavor Notes: Nuts, sugarcane, spices
In recent years, Papua New Guinea coffee has begun to enter the world specialty coffee ranks on behalf of Oceania, bringing its unique high-quality washed Arabica beans. Papua New Guinea coffee features full, well-formed beans, moderate acidity, and a fragrant, smooth mouthfeel.
Brewing Method
Hand-pour Papua New Guinea coffee: 15g of coffee, medium grind (using Fuji's ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and stop. Wait until the water level in the coffee bed drops to half, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.
Origin and Geography
Papua New Guinea is an island nation in Oceania. In Malay, "Papua" means "curly hair." It is said that in 1545, the explorer Retes reached the island and discovered that most of the island's inhabitants had curly hair, so he called it "the island of curly-haired people," and this name has been passed down ever since. Papua New Guinea is located east of Indonesia and has a typical island climate, situated between the equator and 10 degrees south latitude. It features tropical rainforest, volcanic rocks, and plateau terrain, with elevations ranging from 1200-2500 meters, making it a paradise for coffee cultivation.
Coffee Production and Industry
Local production is not large, with about 85% of the total coffee production coming from small farmers' garden cultivation systems. Small farmers join local cooperatives to share processing equipment. Coffee is the second largest agricultural export by volume in Papua New Guinea, demonstrating the importance of the coffee industry to the country's economy. Due to different coffee varieties from Indonesia, higher elevations than Sumatra, and the use of washed processing, PNG coffee's regional flavor is completely different from Indonesia's mellow and deep flavors. Instead, it has brightness, sweet and sour notes, and floral and fruit aromas, similar to South American flavors.
Natural Environment and Quality
Papua New Guinea boasts a transcendent and pristine natural environment with vast, fertile land. Its unique volcanic soil and abundant rainfall create excellent natural conditions for coffee growth. Papua New Guinea's premium coffee beans are as beautiful and precious as the country's national bird, the bird of paradise.
Kimel Estate
Large plantations typically have their own washing stations, while smaller individual coffee farmers can better control the quality and flavor expression of their output. Located in Papua New Guinea's western highlands, in the Waghi Valley near the Kimel River, Kimel Estate, like many large farms/estates, has its own dedicated washing station. In fact, this is an estate jointly owned by many independent small coffee farmers from the surrounding Opais people—in a sense, it's a private cooperative. Due to excellent growing conditions and stable quality control processes at the washing station, the produced coffee has vibrant brightness while preserving a considerable degree of Papua New Guinea coffee's unique flavor characteristics.
Varietal Diversity
Another special feature is the diverse range of coffee varieties cultivated at Kimel—so many that you can't count them on one hand: Typica, Arusha, Blue Mountain, Mundo Novo, Catimor, Caturra... and even more. In fact, just as one doesn't put all eggs in one basket, most farmers plant different varieties to avoid the risk of poor growth or production below expectations for a specific variety, which also creates interesting expressions of coffee flavor characteristics.
Tasting Profile
This Kimel Estate Peaberry presents subtle spice notes on the palate, with nutty and sugarcane sweetness that is refreshing and pleasant upon entry. It has a cream-like smooth and buttery mouthfeel, with the peaberry's texture being more solid and well-rounded. The overall performance is balanced and smooth. The flavor is rich, the aroma is pleasant, without any herbal or earthy notes. Its texture is as intense and full-bodied as a Van Gogh painting.
