Sidamo coffee flavors are incredibly diverse. Due to different soil compositions, regional microclimates, and countless native coffee varieties, coffee produced in each town area exhibits distinct differences and characteristics. The Sidamo region is located in southern Ethiopia, where agriculture dominates the local economy. Coffee growing areas are situated around the Great Rift Valley.

Shakisso, located in Guji Zone, Oromia Region, borders Sidamo and Gedeo. This area contains numerous mining pits that were historically used for gold extraction, leaving many cavities throughout the coffee growing region, making it dangerous to walk between coffee plantations. Shakisso stands out as a unique producing area within Guji/Sidamo - even within Sidamo, it's a remote region far from most coffee-growing areas. Gold mining is another famous local product. Factors such as miners, land disputes, and ethnic tensions caused instability in the region during 2006. Consequently, the biggest challenge facing this area today is the need for manpower to maintain the growing areas and harvest coffee. Local smallholders began growing organic coffee in 2001, working closely with medium-sized coffee producers who understand how to cultivate forest coffee in highland regions.

Flavor: Lemon, mango, blueberry, wine-like aroma

Hand-pour Sidamo: 15g of coffee, ground to medium-fine (Fuji Royal hand grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour: 30g of water, bloom for 27 seconds. Continue pouring to 105g, then pause until the water level drops halfway in the coffee bed. Slowly pour until reaching 225g total, avoiding the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
