Flavor Profile

Distinct floral notes, with rich citrus aromas in both dry and wet fragrance. The front phase features lemon, kumquat, white grape juice, and other diverse flavors. The middle to back phase presents rich citrus sweet and sour notes, like the rich sweetness of soda water, with a distinct and prominent personality—quite rare to find.

Ethiopia's Coffee Grading System

In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest grades. Therefore, in the past, only Yirgacheffe WP G2 was commonly seen in the market.

Note: Yirgacheffe G1 was a grade specially requested by Japan's Mitsubishi from the Ethiopia Coffee & Tea Authority. It first appeared in the market during the 2002-2003 season. The production of G1 grade beans is not achieved through typical screening methods, but rather through strict manual selection from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. The green beans are nearly uniform in size, quite beautiful in appearance, and contain almost no defective beans. After tasting, they better express the unique characteristics of Yirgacheffe. Due to this strict production process, the annual output of Yirgacheffe G1 is quite scarce, averaging about 600 bags.

Most Yirgacheffe coffee undergoes washed processing, fermented in washing tanks for about 72 hours to remove the parchment, then dried directly outside the facility. After manual selection of the green beans, they pass quality inspection by the Ethiopian Coffee and Tea Authority and are exported through competitive bidding. The annual production is approximately 225,000 bags (60kg each), primarily exported to Northern Europe (mainly Germany) and Japan in the past, with increasing attention from North America recently.

Yirgacheffe Region

Yirgacheffe itself is a small town with about 20,000 people. The three neighboring small regions—Wenago, Kochere, and Gelena Abaya—produce coffee with flavors almost identical to Yirgacheffe, so they are also classified under the Yirgacheffe regional category. Both culturally and geographically, Yirgacheffe is similar to its neighboring Sidamo, but Yirgacheffe seems more favored with exceptional natural conditions. Top-quality Yirgacheffe coffee features floral notes, bright citrus fruit acidity, lemon-toned aromas, and a silky smooth mouthfeel.

Brewing Instructions

Hand-pour brewing for washed Worka: Use 15g of coffee, ground to medium-fine (Fuji grinder with ghost teeth at setting 3.5), V60 dripper, water temperature 90-92°C. First pour 30g of water for a 27-second bloom, then pour to 105g and stop. Wait until the water level drops to half before continuing to pour. Slowly pour until reaching 225g total water. Discard the tail end. Water-to-coffee ratio is 1:15, extraction time 2:00.

Compared to the traditionally natural-processed Harar region, natural-processed Yirgacheffe is not as common. As the region where Ethiopia's first washed processing plant was established, coffee enthusiasts are more familiar with washed Yirgacheffe, known for its elegant lemon and citrus characteristics.

Washed processed coffee is less likely to have wild flavors, possessing pure and refreshing qualities suitable for light roast levels. This washed Ethiopian coffee reaches the highest G1 grade, indicating very few defects.

Introduction

This coffee comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb district, established in 2005, and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year. It is known for producing high-quality natural-processed Yirgacheffe. The Worka Cooperative has approximately 300 coffee farmers. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.
