Brewing Instructions

Hand-poured Morgan: 15g of coffee, ground to medium-fine (small Fuji ghost tooth blade 3.5 grind), V60 filter cup, 91-93°C water temperature. First pour 30g of water for 27 seconds pre-infusion, then pour to 105g and pause. Wait until the water level drops to half before continuing to pour slowly until reaching 225g. Discard the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

The Story of Geisha Coffee

Geisha is pronounced the same as the Japanese word for geisha, hence it's also known as "geisha coffee." Because the coffee trees are taller than typical coffee varieties, they were originally planted in a small area within the estate and used as windbreaks. The estate owner's son, seeking to participate in the annual Panama Best Coffee competition, tested all coffee tree varieties throughout the estate, giving Geisha its chance to shine. Since then, it has participated in various world coffee competitions, winning a total of eleven championships.

The Geisha variety was discovered in the Geisha forest of Ethiopia in 1931 and then sent to the Coffee Research Institute in Kenya. In 1936, it was introduced to Uganda and Tanzania, and in 1953, Costa Rica brought it in. For a long time, Geisha didn't receive much attention until one day, Don Pachi initially brought it from the small town of GESHA in southwestern Ethiopia to Costa Rica. Later, Geisha traveled along the southern route into Panama, where La Esmeralda estate separated it from other varieties and won the national coffee championship.

Geisha possesses full sweetness, an extremely clean mouthfeel, and rich aromas that range from berries and citrus to mango, papaya, and peach flavors. A very distinct bergamot-like aftertaste is also one of its typical cupping attributes. To this day, Geisha remains the champion among coffee varieties.

About Finca Morgan Estate

Finca Morgan Estate is located southwest of the "Baru Volcano," known as Panama's highest peak. The estate covers approximately five hectares, with an average of 2,000 coffee trees per hectare. Due to plant growth characteristics and cultivation philosophy, only some coffee trees produce coffee fruit each season. The coffee cherries undergo meticulous selection and processing, with only small amounts of coffee beans reaching the market.

Finca Morgan Estate is influenced by both Atlantic monsoon climate and Pacific monsoon climate, creating rich and diverse microclimates within the estate. The large temperature difference between day and night slows the maturation of coffee cherries, allowing for more complete development and enhanced sweetness. Due to the high altitude, the estate's terrain is predominantly mountainous, with coffee planted on steep slopes, which adds to the difficulty of coffee tree management and fruit harvesting. For coffee tree management, if a tree is found to have pest damage, the estate will remove the entire tree and renew the soil to isolate the disease and protect other healthy coffee trees.

This has kept Finca Morgan's green bean prices at high levels in the market, with customers mainly being competition baristas within the coffee industry. These top baristas believe that whether a coffee can become exceptional is determined when it's still a green bean or even a seed. Like Finca Morgan's Geisha, its destiny as an extraordinary cup is determined from its green bean stage.
