Origin and Region

The Boquete region in Panama, located in the Chiriquí province bordering Costa Rica, is renowned for producing the famous Geisha coffee and is world-famous for high-quality Arabica coffee. The Tedman & MacIntyre Estate, situated at 4,000 feet altitude in the Boquete mountains, originates from two of Panama's earliest coffee families: the Tedman and MacIntyre families.

Brewing Method

Hand-pour brewing for Floral Butterfly: 15g coffee, medium grind (Fuji鬼齿刀4 grind), V60 dripper, water temperature 88-89°C. First pour 30g water, 27-second bloom, then pour to 105g and pause. Wait until the water level drops halfway before continuing the pour. Slowly pour until reaching 225g total. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

It possesses 40% premium Geisha heritage, composed of three varieties: Geisha, Caturra, and Catuai. It's grown in the Barú volcano region of Boquete, at an altitude of 1,600 meters in volcanic areas. The processing plant uses refined washed processing. Panama's special local microclimate leads to abundant rainfall in this region, combined with large day-night temperature differences. Additionally, the unique volcanic rock soil of the volcanic area, along with meticulous harvesting and refined processing, makes this coffee perform exceptionally well in body, acidity, and floral notes.

Washed Processing Excellence

There are many methods of washed processing today, but generally, after coffee cherries are harvested, floating beans are removed, then the pulp is removed, and coffee beans are soaked in fermentation tanks. Enzymes in the water soften the mucilage attached to the coffee bean's parchment, while natural yeast breaks down sugars in the mucilage. This process is called fermentation. After fermentation is complete, coffee beans are moved to drying patios to dry. During drying, coffee beans must be constantly turned to ensure even drying. Finally, they're stored in parchment in warehouses, and only after green bean merchants place orders are they hulled and bagged. Coffee processed this way has a clean taste, emphasizing bright, lively fruit acidity, as well as clear fruit flavors and floral notes.
