90+ beans adopt a completely different naming approach compared to conventional specialty beans. They don't feature region and estate names; instead, each coffee is named according to its flavor profile. For example, "Zhu Mang" means "best approach" in the local dialect. Starting from a flavor concept, then naming, and finally selecting regions and partner farms, it's clear that 90+ is a brand with boutique business style.
Ethiopia's Coffee Cultivation
In Ethiopia, you can find various coffee cultivation methods: from vast wild coffee forests and semi-developed lands, to traditionally managed small plots, and modern plantations. About 50% of coffee is grown at altitudes above 1,500 meters. Ethiopian coffee is divided into nine major coffee regions based on the four different production methods mentioned above, including five specialty coffee regions: Sidamo, Yirgacheffe, Harar, Limu, and Lekempti, plus four commercial coffee regions: Djimmah, Illubabor, Tepi, and Bebeka. Each region uses either natural or washed processing methods, and different processing methods affect the flavor. Currently, natural processing accounts for about 80%, while washed processing accounts for about 20%.
The 90+ Philosophy
"90+" doesn't refer to all coffees scoring above 90 points. Good coffee appears one year and may be absent the next. Sometimes it appears in different estates with various flavor characteristics. "90+" refers to a premium coffee series of 13 flavor profiles. These coffees come exclusively from American specialty coffee creators - Ninety Plus Coffee. They are all Ethiopian heirloom varieties, cultivated in ecological environments and processed to artistic standards for flavor optimization. The processing is 90+'s specialty - they separate these coffees by variety, microclimate, and harvesting timing, tasting each one individually, designing specific processing methods for each flavor profile to achieve particular flavor characteristics, much like how major fashion designers dedicate themselves to creating near-artistic craftsmanship. Natural products undergo extensive refinement and improvement before being presented in their most beautiful form.
Drima Zede Processing Excellence
The ancient natural processing method rarely achieves pure flavor, but Drima Zede, with 90+ technical support, manually selects only the most mature coffee cherries. During the natural drying process, careful constant stirring ensures uniformity. The final result is an exceptionally transparent and pure taste with significant changes between hot and cold temperatures. The aromas of fruit, flowers, and oak barrels are incredibly captivating!
Zhu Mang's Distinctive Character
Also an Ethiopian natural coffee, Zhu Mang, after undergoing strict supervision and selection, avoids the annoying earthy impurities and high defect rates common in natural beans. Instead, it highlights the captivating sweetness that natural processing is renowned for. Zhu Mang's enchanting fruity notes inherit the captivating aroma of traditional Ethiopian natural processing, unreservedly expressing rounded, full-bodied sweetness with a long aftertaste and perfectly mouth-watering fruit acidity. Daily brewing of Zhu Mang is quite approachable. The beans themselves are rich in flavor, and whether using refreshing pour-over or rich siphon brewing, they can beautifully showcase their inherent character.
90+ Level Up series Zhu Mang flavor profile: Nectarine, tropical fruits, clean and bright taste, astonishing from the first sip.
