Introduction to Natural Process Yirgacheffe

Compared to the traditionally natural-processed Harar region, natural process Yirgacheffe is relatively uncommon. As the region where Ethiopia's first washing station was established, Yirgacheffe is more familiar to coffee enthusiasts for its elegant lemon and citrus characteristics in washed processing.

Washed-processed coffee is less likely to have wild flavors, characterized by its pure and refreshing qualities, making it suitable for light roast levels. This washed Ethiopian coffee can reach the highest G1 grade, which already indicates very few defects.

Coffee Origin

This coffee comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako Farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb district, established in 2005 and joined the renowned Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) in the same year. It is known for producing high-quality natural process Yirgacheffe coffee. The Worka Cooperative has approximately 300 coffee farmers. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.

Flavor Profile

Distinct floral aromas, with rich citrus notes in both dry and wet aroma. The front palate features lemon, kumquat, white grape juice, and diverse colorful flavors. The middle to back palate delivers intense citrus sweetness with a rich, soda-like sweetness. It has a distinctive and prominent personality, truly rare and exceptional.

Ethiopian Coffee Grading System

In Ethiopia's coffee grading system, washed Grade 2 and natural Grade 4 are the highest levels. Therefore, historically, only Yirgacheffe WP G2 has been available on the market.

Note: Yirgacheffe G1 was specially requested by Japan's Mitsubishi from the Ethiopia Coffee & Tea Authority and first appeared on the market in 2002-2003. G1 grade beans are not produced through general screening but are strictly hand-selected from green beans in the Knoga area of Yirgacha village, which has the highest altitude and excellent soil. The green beans are nearly identical in size with quite beautiful appearance and almost no defective beans. After drinking, one can better appreciate the characteristics of Yirgacheffe. Due to the strict production process, the annual output of Yirgacheffe G1 is quite scarce, averaging around 600 bags.

The refining method for Yirgacheffe is primarily the washed process, where beans are fermented in washing tanks for about 72 hours to remove pulp, then dried directly outside the plant. After manual selection of green beans, they undergo quality inspection by the Ethiopian Coffee and Tea Authority and are exported through competitive bidding. The annual production is approximately 225,000 bags (60kg each), previously mainly exported to Northern Europe (primarily Germany) and Japan, and recently has also been gaining attention in North America.

Brewing Recommendations

Hand-pouring washed Worka: 15g of coffee, medium-fine grind (Fuji grinder setting 3.5), V60 dripper, water temperature 90-92°C. First pour 30g of water for 27 seconds pre-infusion, then pour to 105g and pause. Wait until the water level drops halfway in the coffee bed, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

About Yirgacheffe Region

Yirgacheffe itself is a small town with about 20,000 people. The three neighboring small regions of Wenago, Kochere, and Gelena Abaya produce coffee with flavors almost identical to Yirgacheffe, so they are also classified under the Yirgacheffe regional category. Yirgacheffe is culturally and geographically similar to the nearby Sidamo region, but Yirgacheffe seems more favored with exceptional natural conditions. Top-quality Yirgacheffe coffee features floral aromas, bright citrus fruit acidity, lemon-toned notes, and a silky smooth mouthfeel.
