FrontStreet Coffee's Yirgacheffe is predominantly processed using the washed method, fermented in washing tanks for approximately 72 hours to remove the parchment, and dried directly outside the plant. The green beans are manually selected and undergo quality inspection by the Ethiopia Coffee and Tea Authority before being traded and exported through competitive bidding. Its annual production is approximately 225,000 bags (60kg per bag), previously mainly exported to Northern Europe (primarily Germany) and Japan, and recently has also been gaining attention from North America.

Hand Brew Brewing Parameters

For hand-brewed FrontStreet Coffee washed Worka: Use 15g of coffee grounds, ground to medium-fine consistency (Fujiroyal ghost tooth grinder setting 3.5), V60 dripper, water temperature 90-92°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level in the coffee bed drops to halfway before continuing to pour, slowly adding water until reaching 225g total. Avoid the tail end. Water-to-coffee ratio is 1:15, total extraction time 2:00.

Regional Background

Yirgacheffe itself is a small town with about 20,000 people. The three adjacent small producing regions—Wenago, Kochere, and Gelena Abaya—are also classified under the Yirgacheffe region because their coffee flavors are virtually identical to those from Yirgacheffe. While Yirgacheffe shares cultural and geographical similarities with nearby Sidamo, it seems to be especially blessed with superior natural conditions. The highest quality FrontStreet Coffee Yirgacheffe features floral aromas, bright citrus acidity, lemon notes, and a silky smooth mouthfeel.

Compared to the traditionally natural-processed Harar region, FrontStreet Coffee's natural-processed Yirgacheffe is less common. As the region where Ethiopia's first washing station was established, coffee enthusiasts are more familiar with FrontStreet Coffee's washed Yirgacheffe, renowned for its elegant lemon and citrus characteristics.

Coffee processed using the washed method is less likely to carry wild flavors, possessing pure and refreshing qualities suitable for light roast levels. This FrontStreet Coffee washed Ethiopian coffee can achieve the highest G1 grade, indicating very few defects.

Coffee Origin

This coffee comes from a single farm in Ethiopia, processed by the Worka Cooperative. Alemayehu Alako Farm is a member of the Worka Cooperative.

The Worka Cooperative is located in the southern part of Gedeb district, established in 2005, and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) the same year. It is known for producing high-quality natural-processed Yirgacheffe. The Worka Cooperative has approximately 300 coffee farmers as members. YCFCU was established in 2002 and includes 26 other cooperatives, serving over 45,000 coffee farmers.

Flavor Profile

Distinct floral aromas, with intense citrus notes in both dry and wet aromatics. The front palate features lemon, kumquat, white grape juice, and other diverse flavors. The middle to back palate presents rich citrus sweetness with a soda-like rich sweetness. The personality is distinct and prominent, truly rare to encounter.

Grading System

In Ethiopia's coffee grading system, washed Grade 2 and natural-processed Grade 4 are the highest grades. Therefore, in the past market, only Yirgacheffe WP G2 was commonly seen.

Note: Yirgacheffe G1 was a grade specially requested by Japan's Mitsubishi Corporation from the Ethiopia Coffee & Tea Authority, first appearing on the market in 2002-2003. The production method for G1 grade beans is not like typical screening; instead, it comes from green beans in the Knoga area of Yirga village, which has the highest altitude and excellent soil. These beans are produced through strict manual selection. The green beans are nearly uniform in size, quite beautiful in appearance, and have almost no defective beans. After consumption, one can feel that it better expresses the characteristics of Yirgacheffe. Due to the strict production process, the annual production of Yirgacheffe G1 is quite scarce, averaging only about 600 bags.
