The Rise of Panama Coffee
Panama coffee has been the most popular country in Central America for the last 5-6 years. The main reason is that the Peterson family's Panama Hacienda La Esmeralda cultivated a variety of coffee tree called Geisha, which has driven coffee enthusiasts crazy. Therefore, Geisha is regarded as the world's top coffee bean. For this reason, the Panama Coffee Excellence Cup auction is separate from the Central and South America Cupping Competition and is also the earliest auction country, held annually in mid-May. Panama coffee is not only impressive in the Geisha variety but also continuously innovates in mid-range green bean processing. It not only has traditional water processing methods but also honey processing methods popular in neighboring Costa Rica. Additionally, sun-dried beans, which are gradually taking shape in Central America, are also produced in small quantities in Panama, attracting the attention of coffee professionals worldwide.
Hand Brew Preparation
Hand-brewed Panama Ileta. 15g of coffee grounds, medium grind (Fuji ghost tooth blade #4), V60 filter cup, water temperature 88-89°C. First pour 30g of water for 27 seconds of blooming, then pour to 105g and stop. Wait until the water level drops to half, then slowly pour water until reaching 225g. Avoid the tail section. Water-to-coffee ratio is 1:15, extraction time 2:00.

Ileta Estate
Café de Eleta (Ileta Estate) is located in the small area of the Santa Clara region, one kilometer from the Costa Rica border, near La Amistad International Park, a major primary forest reserve belonging to the Central American ecological habitat. Ileta Estate began acquiring land in the 1970s, covering about 130 hectares. Initially, it cultivated vegetables and operated livestock farming. In 1995, it started growing coffee and was named Café de Eleta S.A. It continued to expand land area until today, reaching 420 hectares, making it one of the large-scale coffee plantations in Panama and one of the best-known Panama coffees. Due to abundant water resources, it has a private 530KW hydropower plant. Besides being self-sufficient in electricity, excess electricity is sold to Distribución de Electricidad Chiriquí S.A. and connected to the grid.

Coffee History in Panama
Coffee was introduced to Panama in 1780 when Europeans brought the first Typica tree varieties. Panama coffee is very smooth, with plump, lightweight beans and perfectly balanced acidity. Its high-quality coffee beans have pure and distinctive flavors. Due to its popularity, most of Panama's high-quality coffee beans are exported to France and Finland.
Main Coffee Growing Regions in Panama
Boquete Region: This area produces abundant and high-quality coffee, making it the region with the highest production and best quality in Panama.
Volcan Region: The coffee produced here is characterized by mild and balanced flavors. It has gradually attracted attention from international experts and coffee lovers, and it is believed that it will soon be on par with the Boquete region.
Santa Clara Region: Fertile coffee farms are irrigated and nourished by the clear river water from the Chorerra waterfall. Additionally, being near the Panama Canal allows fresh and pure Panama coffee to be conveniently shipped worldwide.
Piedra de Candela Region: This region is considered to have the most potential for developing high-quality specialty coffee.
