Sidamo

Sidamo coffee exhibits incredibly diverse flavor profiles. Different soil compositions, regional microclimates, and countless native coffee varieties create distinct differences and characteristics in coffee produced by each town and region. The Sidamo growing region is located in southern Ethiopia, where agriculture dominates the economy. Coffee plantations are situated around the Great Rift Valley.

"Ethiopian Sidamo" represents a single-origin type of Arabica coffee grown in Ethiopia's Sidamo province. Like most African coffees, Ethiopian Sidamo is characterized by small gray beans, but distinguished by its rich, spicy, wine-like or chocolate-like flavors and floral aromas. The most distinctive flavors found in all Sidamo coffees are lemon and citrus notes, with bright, crisp acidity. Sidamo coffee includes Yirgachefe and Guji coffees, both of exceptional quality.

Washed-processed coffees tend to exhibit less wild flavors, possessing pure and refreshing characteristics suitable for City to Full City roast levels. Some exceptional Ethiopian washed coffee beans may reveal distinct notes of uplifted lemon, citrus essential oils, jasmine floral notes, and honey flavors, with more pronounced acidity and lighter body.

Region Introduction

Shakisso is located in the Guji zone of Sidamo, in the southern Oromia region, bordering Sidama and Gedeo. This area contains numerous mining pits originally used for gold extraction, creating many holes throughout the coffee-growing region, making it dangerous to walk between coffee plantations. Shakisso stands as a unique producing area within Guji/Sidamo, even within Sidamo it remains a remote region far from most coffee-producing areas. Gold mining represents another famous local product. Factors including miners, land, and ethnic tensions led to regional instability in 2006. Consequently, this area now faces its greatest challenge: the need for human resources to maintain plantations and harvest coffee.

Local small farmers began cultivating organic coffee here in 2001, working closely with medium-sized coffee producers who understand how to grow forest coffee in highland areas. This represents one of the most distinctive micro-regions within the Sidamo growing area. Coffee from this region possesses remarkable uniqueness and consistently captures market attention. Ninety Plus' legendary bean (nekisse) originally means "Nectar from Shakisso," with both its region and name derived from Shakisso.
