Estate Introduction

Fazenda Rainha belongs to the renowned and respected Carvalho Dias coffee family. The family's four major estates have won awards every year since the first Brazil Cup of Excellence competition in 1999, accumulating over 12 awards in 7 years. In 2004, they dominated the competition by taking first place, ninth place, and eleventh place, among others. While many Brazilian estates aspire to win awards over the years, this family's estates have consistently claimed multiple honors. Even Fazenda Rainha, purchased by FrontStreet Coffee, boasts an impressive record: second place in 2000, third place in 2001, and 29th place in 2005. To date, Fazenda Rainha has won awards three times.

The Carvalho Dias family are also founding members of the Brazil Specialty Coffee Association. Their commitment to coffee quality and environmental protection is evident to all. Within their farms, they utilize natural waterfalls to develop pollution-free hydroelectric power, making them self-sufficient in electricity needs (another of their award-winning estates is named after this waterfall - the Waterfall Estate). They have built churches, classrooms, nurseries, medical stations, and insist on preserving original native forests while continuously engaging in reforestation efforts. Taking Fazenda Rainha as an example, environmental protection is thoroughly implemented. Due to its high altitude terrain rather than flat plains, mechanical harvesting is impossible, making all fruit harvesting completely manual. They cultivate low-yield, high-quality Bourbon varieties, representing the essence of premium Brazilian coffee!

Fazenda Rainha has been owned by the Carvalho Dias family for over 116 years. Located in the high mountain region of São Paulo state near the Minas border, at altitudes ranging from 1200 to 1400 meters, it receives abundant rainfall of over 1800mm annually without disastrous floods. The average annual temperature is only 19°C, causing coffee fruit to grow slightly slower but with denser texture. Though yields are lower, its aroma and flavor far surpass typical Brazilian highland beans. The estate primarily cultivates Bourbon varieties, including some Bourbon trees over 110 years old. Beyond growing Bourbon varieties, Fazenda Rainha's meticulous and thoughtful processing methods are another key to their exceptional quality:

Fazenda Rainha's Coffee Processing System

Ripe coffee cherries are hand-picked into cloth bags to avoid ground contact. All coffee harvested on a given day is immediately transported to the estate's processing facility for semi-sun-dried processing (Pulped Natural). Using hand-picking and cloth bags prevents earthy flavors and any improper fermentation. When these harvested coffee cherries arrive at the processing facility, they immediately undergo "washing": the cherries are cleaned and sorted by bean size, filtering out unqualified or dried fruits (bóia beans). Qualified beans continue to the pulping stage (using a pulper machine).

After removing the fruit pulp, coffee beans still retain some mucilage on their parchment shell. These beans with residual mucilage are placed on patios to dry until moisture content drops to around 20%. This stage allows the coffee beans to absorb their own starch components while avoiding the disadvantages of full natural processing, where drying process flavors cannot be controlled. These residual mucilage starch components provide special sweetness without becoming uncontrolled off-fruit flavors or moldy tastes.

Afterwards, they are sent to drying machines for final drying, reducing moisture content to 11% before being transported to warehouses for resting. Before export, they are hulled and graded. This segmented Pulped Natural semi-sun-dried method is one of the main reasons for Fazenda Rainha's consistent flavor. Of course, their insistence on using Bourbon varieties is another reason for their extremely high reputation!
