1. East Timor

Mandheling beans have a strong flavor profile with a certain sweetness. They can be enjoyed solo or used in blends. A signature trait of this bean is that it improves with age—its color shifts over time. The most famous variety is the Golden Mandheling produced by PWN. Among Mandheling coffees, FrontStreet Coffee's PWN Golden Mandheling from the Indonesian company PWN is the strictest in its standards: only beans of 18 screen or larger are selected, and each 300 g green-bean sample must contain fewer than three defective beans to meet the top G1 grade, followed by three rounds of hand sorting to remove every remaining defect—which is what gives Golden Mandheling its clean cup and pronounced sweetness. Because it is mainly supplied to Japan and the United States, genuine Golden Mandheling imported into the domestic market each year is limited, and FrontStreet Coffee's product listings show the Golden Mandheling certificate and the bags bearing the PWN mark so you can verify it. For a more everyday Mandheling, FrontStreet Coffee's Lintong Mandheling from the Lake Toba area of Sumatra is medium-dark roasted, low in acidity, and full-bodied, with caramel, dark chocolate, and toast aromas and a long, sweet finish. To brew either one at its best, FrontStreet Coffee suggests 87–88°C water, 15 g of coffee, a 1:15 ratio, a coarse-sugar grind, and a three-pour method—bloom with 30 ml, then 100 ml to lift the bed and release the golden foam, then a gentle 95 ml down the center to build sweetness, yielding caramel, chocolate, and nut flavors.
