The Rise of Specialty Coffee
Entering the 21st century, the specialty coffee wave swept across the globe. Instant coffee had long become a thing of the past, abandoned by increasingly health-conscious consumers. Industry giants like Starbucks and COSTA, which had dominated the ground coffee market for decades, were no longer focusing solely on milk + syrup coffee-flavored beverages. Instead, they began actively developing pour-over, sugar-free, milk-free black coffee options. Under this wave,越来越多的消费者在这一浪潮下,也拨开了调味品的迷雾,体验到了真正属于咖啡自身的产地风味。
The Evolution of Coffee Classification
From then on, coffee was no longer simply classified by brewing and flavoring methods into latte, cappuccino, mocha, caramel macchiato, Americano, etc. Instead, it became increasingly distinguished and described by country of origin, region, variety, and processing method. Names such as Ethiopian natural Yirgacheffe, Colombian washed Narino Bourbon, and Indonesian honey-processed West Java began appearing more frequently on café menus. Among these, Geisha rapidly gained popularity over just a few years, becoming a legend and queen in the hearts of specialty cafés and coffee connoisseurs.
The History and Origins of Geisha
Geisha is a variety of coffee species, also known as "Geisha" in regions like Japan and Taiwan, adding a touch of romance to this fascinating variety. Tracing its roots, Geisha should originate from the Geisha Mountain region of Ethiopia. In the 1930s, it was gradually transplanted to places like Kenya and Tanzania. In 1953, Costa Rica introduced a batch of coffee tree varieties from Tanzania, including Geisha. In 1963, Don Pachi, later known as the "Father of Geisha," introduced Geisha trees from Costa Rica and distributed them to Panamanian coffee farmers for cultivation. However, due to poor yield and plain flavor, it did not attract attention. It was the Peterson family—three generations of owners of Panama's Hacienda La Esmeralda—who truly made Geisha burst onto the scene and claim its throne.
Global Expansion of Geisha Cultivation
The Geisha variety has also been highly sought after in this trend. Not only have Panamanian estates rushed to introduce it, but countries like Colombia, Costa Rica, Guatemala, Nicaragua, and Bolivia have also successively tried cultivating Geisha. After several years of cultivation, there have been many exceptional origins and estates.
For example, in the "COTY" Coffee of the Year competition held by SCAA (Specialty Coffee Association of America) in 2011, the champion was actually a Geisha variety from Colombia, breaking Panamanian Geisha's monopoly on the championship.
Colombian Geisha
Colombia is a veteran powerhouse in coffee cultivation, with high altitudes, numerous volcanoes, fertile soil, and abundant rainfall. The coffee-growing regions in the central and southern parts—Tolima, Cauca, Huila, Narino, etc.—have always been fertile ground for world specialty coffee. This time, introducing Panamanian Geisha varieties, after just a few years, there's great potential to surpass the original. Moreover, unlike the unique citrus and pomelo flavor profile of Panamanian Geisha, Colombian Geisha presents berry aromas and aged tangerine spice notes, making it uniquely distinctive.
