Red Cherry OCR (Operation Cherry Red) (Sun-Dried Yirgacheffe)
"Operation Cherry Red" (OCR) is a project dedicated to improving the quality of small-scale farms. Dutch coffee merchant Trabocca invites all Ethiopian farms to produce small batches of approximately 1500-3000 kg (25-50 bags) of beans before the harvest season. These are carefully selected by meticulous, sharp-eyed, and hardworking women who pick 100% ripe red cherries.
The main producing areas participating in "Operation Cherry Red" (OCR) include Yirgacheffe, Sidamo, and others, all of which showcase unique flavors that fully demonstrate the characteristics of Ethiopian beans. The project organization conducts further selection from the received coffee, and farms that pass the cupping quality tests at both Ethiopian and Dutch offices receive high bonuses. Only coffee with cupping scores above 88 points can qualify as "Operation Cherry Red" (OCR) premium coffee.
