Brazil's three major specialty coffee producing regions are Cerrado, in the mid-west of Minas province, South Minas, and Mogiana. Brazil's Blossom Valley Yellow Bourbon is located in Brazil's Cerrado region. Not all coffee produced on the Cerrado grasslands can carry the Cerrado name, however - only coffee grown on the plateaus of mid-west Minas province at elevations of 1,100-1,300 meters, with high altitude and fertile soil, can produce the high-quality, mellow, full-bodied coffee that lacks earthy flavors.

Yellow Bourbon generally commands a slightly higher price, but its unique sweetness and body are noticeably better than the common Mundo Novo variety or the Red Bourbon typically used in Brazil. Especially in the aftertaste, you can sense a warm, cashew-like nutty finish.
