The aroma of raw beans originally only has a faint, fresh fragrance. Through roasting, coffee develops its characteristic aroma. According to reports, this special aroma is composed of more than 700 different aromatic compounds. These components are greatly influenced by the caramelization and Maillard reactions during the roasting process. The necessary components for these reactions vary depending on the quality of the raw beans.

So-called quality refers to factors such as coffee variety, growing environment, subsequent processing and management methods. Therefore, coffee and its aroma can be said to be the manifestation of all related factors. Coffee with excellent aroma expression is the product of uniform roasting.

The coffee we drink today can be botanically classified as either "Arabica" or "Canephora Robusta." The coffee we drink in cafes is generally Arabica, which has rich and intense aromas. Arabica also has many varieties, so the aroma presentation from the variety itself is extremely varied, and tasting the various differences is quite enjoyable.

Catimor. Catimor is a combination of Arabica and Robusta varieties. Robusta has good resistance to leaf rust disease, rich oils, high yield, and is easy to cultivate. After hybridization with the Arabica Typica variety, Catimor acquired 25% Robusta genes. It improved resistance to leaf rust, retained rich oils, and also inherited some of the rich flavor of the original Typica variety. Therefore, most Yunnan estates began large-scale cultivation of Catimor, while the cultivation range of Typica began to shrink. However, I must emphasize that Catimor still falls short of Typica in terms of taste.

Knowledge point: The Pacamara variety produces the best quality when grown in El Salvador and Guatemala.
