The Lamastus family, located in Panama and situated within the renowned specialty coffee region of Boquete, operates three distinctive estates: Elida Estate, El Burro Estate, and Luito Gesha Estate. Currently managed by third and fourth-generation estate owners Wilford Lamastus and Wilford Lamastus Jr., the Lamastus family's coffee heritage spans over a century of tradition.
The ability to produce exceptional ultra-specialty coffee can be attributed to the following superior natural conditions:
1. Fertile volcanic soil
2. Microclimate weather variations
3. High-altitude growing environment
4. Excellent pristine forest
5. Highly distinctive micro-batches
Panama Elida Estate
Elida Estate is situated at a remarkably high altitude, with the batches we procure averaging approximately 1700-1800m. Elida Estate itself is located within a national park reserve area, maintaining an extremely pristine forest landscape while preserving many native tree species along with edible tomato and plum trees. Due to environmental protection considerations, Elida Estate has not paved asphalt roads. Riding in estate owner Wilford's 4X4 off-road vehicle through the estate, as the altitude increases, the temperature drops noticeably. The cool, low temperatures combined with shade tree protection provide an excellent growing environment for coffee trees.
In addition to strict maintenance of the estate environment, Wilford has experimented with numerous natural processing methods, including traditional drying racks, modern drying racks, courtyard-style sun exposure, shaded drying, and mechanical drying. During the natural drying phase, Wilford requires employees to carefully hand-sort and remove defective beans. Furthermore, Elida Estate meticulously divides batches, with each batch of harvested red cherries receiving different codes to facilitate tracking batch quality and flavor standards during subsequent cupping stages.
