Curious what makes the washed Yirgacheffe in this sale so popular? FrontStreet Coffee's washed Yirgacheffe is the classic first step into Ethiopian coffee: white jasmine florals, bright citrus and lemon acidity, and a clean tea-like finish, at a price that has made it many drinkers' first specialty bean. Yirgacheffe itself is a small town in Ethiopia's southern Sidamo region at about 1,700-2,100 meters, with coffee planted mostly above 1,800 meters - among the highest growing elevations in the world. Its unmistakable white floral aroma and lemon-citrus acidity became so famous that in 2010 the Ethiopian Commodity Exchange formally split it off from Sidamo as its own name.

Two more Yirgacheffe lots worth watching appear in the single-origin section above. The Red Cherry beans come from the "Red Cherry Project" - only fully ripe cherries with no quality defects are picked, sorted at the station, then sun-dried on raised beds and turned every 2-3 hours in the first days to prevent uneven fermentation. After three to five weeks of drying, the dried cherries are hulled. Because the fruit dries on the bean, you get both classic Yirgacheffe character and natural-process tropical fruit: citrus acidity, berry juiciness, honeyed sweetness, and creamy smoothness.

Brewing suggestion for these washed and natural Yirgacheffes: use a V60 at 90-91 degrees, 15g of coffee, a 1:15 ratio, and a fine-sugar grind (80% pass-through on a #20 sieve). Bloom with 30g of water for 30 seconds, pour up to 95g by the one-minute mark, then add the remaining 100g up to 225g by about 1 minute 35 seconds; the drawdown finishes between 2:00 and 2:10.
