Guatemala - Fraijanes El Triunfo Farm Washed
From one of Guatemala's eight renowned coffee-producing regions
The volcanic altitude in the Fraijanes region is quite high, with soil rich in pumice. The Fraijanes plain remains an active volcanic zone, so coffee from this region shares similar characteristics with Antigua. However, abundant rainfall, high and variable humidity, and significant temperature variations give the Fraijanes plain very different flavor profiles.
El Triunfo Farm is located in the Fraijanes - Santa Rosa region of Guatemala, at an altitude of 1250-1370 meters. With over 120 years of operational history, it specializes in producing SHB (Strictly Hard Bean) estate coffee. Due to its mountain location, it utilizes the advantage of multiple trees, employing shade-growing methods to protect coffee trees and ensure moisture retention and absorption. Minimal doses of chemical fertilizers and pesticides are used to protect the coffee while maintaining its quality.
Each year from November to February is the harvest season, when farmers mobilize their entire families, dedicating significant manpower to hand-pick and filter mature coffee cherries. The fresh red fruits are then pulped to remove the flesh. After undergoing washing and resting in water, they are spread under the sun for drying to reduce the coffee beans' moisture content.
