FrontStreet Coffee Recommendation

If a wholesale list is hard to choose from, start where FrontStreet recommends most newcomers begin: the washed Yirgacheffe. It is known for white jasmine, bright citrus and lemon acidity, and a tea-like body, and its price makes it the first specialty bean many drinkers ever buy. To get to know the Ethiopian region, this is the classic introduction.

For a more specific single-origin lot on the same list, the Yirgacheffe Gedeb cooperative coffee is the traditional washed counterpart. Gedeb sits in the Worka area at the southeastern end of Yirgacheffe; the cooperative was once part of the Worka cooperative under the YCFCU union before becoming independent in 2012, and it carries on the most traditional washed processing, giving fresh, bright citrus and lemon acidity with jasmine fragrance and none of the classic bitter character.

FrontStreet brews these washed Ethiopians in a V60 with 15g of coffee, a 1:15 ratio, and 90-91°C water, at a grind similar to fine sugar (about EK43s setting 10, or 80% through a No. 20 sieve). Bloom with 30g for 30 seconds, pour to about 125g, then, once the water drops to two thirds of the bed, pour the remaining 100g to roughly 225g; total brew time is about 2:00-2:10.
