Main Growing Regions

Arabica coffee is suited to mountain areas at altitudes between 800 and 1,800 meters. Too high and the taste turns sour; too low and it turns bitter. Most Arabica is planted in dry-hot valley regions around 1,100 meters, which gives moderate acidity with a rich, mellow aroma. Many parts of Yunnan offer unique conditions suited to Arabica, producing exceptional beans.

The main growing areas are in Lincang, Baoshan, Simao, Xishuangbanna, and Dehong. Baoshan has an average temperature of 21.5°C, reaching up to 40.4°C, with basically no frost year-round, which has made it recognized as the best Arabica growing region. The Arabica grown here is known at home and abroad for being rich but not bitter and fragrant but not intense, with small, uniform beans, a rich, mellow aroma, and fruity notes. Tasting experts from the international coffee organization have placed Yunnan coffee in the same category as Colombian wet-processed Arabica, among the world's high-quality coffees.

Varieties

Typica, a classic high-quality coffee variety, is the main variety for this lot. Typica originated in southeastern Ethiopia and Sudan and is the most widely grown coffee variety in the Western Hemisphere. The plants are relatively robust but not tolerant of intense sunlight, and yields are higher in Hawaii. Typica's top leaves are bronze-colored, giving it the name red-topped coffee.

Hand-pour for Yunnan Flower Fruit Mountain: 15 g of coffee, medium grind (Fuji ghost-tooth grinder, setting 4), V60 dripper, water at 88-89°C. For the first pour, use 30 g of water for a 27-second bloom, then pour to 105 g and pause. Once the water level in the coffee bed drops to half, continue pouring slowly until you reach 225 g in total, discarding the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.

Growth Period

Yunnan Arabica coffee trees begin bearing fruit at 3-4 years of age.

Coffee is a short-day plant with several flowering periods and one concentrated peak. Arabica in Yunnan flowers from February to July, peaking from March to May. Flowering is heavily influenced by climate, particularly rainfall and temperature. Coffee flowers live only 2-3 days. Arabica generally begins to bloom between 3-5 AM and reaches full bloom between 5-7 AM.

Coffee fruit development takes a relatively long time. Arabica fruit takes 8-10 months to mature, typically ripening from October to December of the same year. Rainfall strongly affects fruit development, and climate conditions directly affect the fruit.

Yunnan Arabica

Yunnan Arabica belongs to the Rubiaceae family, Coffea genus. The growing areas are mainly in Lincang, Baoshan, Simao, Xishuangbanna, and Dehong. Arabica coffee originated in Ethiopia or on the Arabian Peninsula.

Flavor description: rich but not bitter, fragrant but not intense, with floral notes, sweet cantaloupe in the middle, and a black tea sensation on the finish.

Baoshan Arabica, a specialty of Baoshan's Lujiang in Yunnan, is a national geographical indication product and one of the highest-quality coffees in China and indeed the world. The beans are uniform and full, with a fresh aroma, rich fragrance, and mellow mouthfeel. Being rich but not intense, it can be compared to the world-famous Blue Mountain coffee. It enjoys a global reputation for its quality: it was rated first-grade on the London market in the late 1950s, earning the nickname "Lujiang No. 1," and was recognized as "the crown of national coffee" at the 1980 national coffee conference.
