FrontStreet Jamaica Blue Mountain No.1 is the top grade of the Blue Mountain classification, and its variety is Typica — one of the landmark Arabica varieties and among the first to spread from Yemen into India, Indonesia and Central and South America. Typica is exceptionally balanced, mild and smooth; its acidity is never sharp, and its aroma is full and pure, though the plant is vulnerable to disease and low-yielding. Blue Mountain's Typica arrived from Martinique in the 1720s and, over more than 200 years, developed better disease resistance, particularly against coffee berry disease. Step outside Jamaica, however, and its clean, quietly fragrant character cannot be reproduced.

The estate behind this lot is Clifton, in production since around 1750 and located at an average of 4300 feet (1310.64 meters). Adequate altitude, mild afternoon cloud shading the slopes, ample sunshine and mineral-rich soil give the trees excellent growing conditions and slow the ripening of the cherry. FrontStreet roasts it to a medium-dark level, which brings out the classic balance of the bean: nuts, dark chocolate and cream caramel opening over a soft sweetness, with acidity, sweetness, bitterness and aroma held in proportion. In cupping, few origins come close to its equilibrium.

FrontStreet's Blue Mountain is roasted fresh within 5 days, so the beans arrive at full flavour and can be brewed straight away. For pour-over, use a Kono dripper to reinforce the full body, 15g of coffee rested 4 to 7 days from the roast date, and a grind a little coarser than you would use for a light roast — roughly the texture of granulated sugar. Brew at 87-88°C at a 1:15 ratio; water that is too hot is the usual cause of scorched, bitter notes, though water that is too cool leaves the cup flat. Pour in three stages: 30g for a 30-second bloom, then to 120g with a vertical, slow, small circular stream, then to 225g slightly faster to keep the filter from clogging. The finished cup is clean and complex, very gentle, with chocolate sweetness and a strong body, and a long fruit note in the tail.
