Mozart is one of the Musician Series, a product from Canet Estate in Costa Rica's Tarrazú region. As the most popular green bean in the Musician Series, it has received widespread acclaim and been pursued by many enthusiasts during its three years on the market. It is made using a unique raisin honey processing method, where fully ripe coffee cherries are sun-dried to a raisin-like state with shriveled skin, then the fruit pulp is removed for slow fermentation in honey processing. This special processing process gives the beans intense aroma and versatile flavor profiles.
Different varieties of coffee fruits harvested at Canet Estate are processed differently, with the yellow Catuai being used to create the Musician Series Mozart.
It's difficult to describe in words the sensation of Mozart in the mouth - it's abundant floral notes, rich strawberry jam, lingering toffee aroma, and finish with rum, berries, and cocoa... Of course, these words cannot perfectly capture its glory and magnificent taste. It's like an unprecedented experience and a brilliant chapter never before seen in specialty coffee.
