Medium Roast:
The roasting level at this stage typically belongs to specialty coffee. The Maillard reaction and caramelization of the coffee are恰到好处 (just right), preserving the fine acidity in the coffee and best showcasing the inherent flavors of the coffee beans. Currently, most specialty coffee single-origin beans on the market are roasted to this level.
This roasting level is particularly suitable for beans that require delicate flavor profiles and retain lively acidity, such as most Ethiopian natural and washed processed beans, Panamanian Geisha natural and washed processed beans, as well as Costa Rican honey processed beans.
Some varieties with high altitude, hard beans, or those dominated by dark chocolate, nut, and cream flavors may not fully display their richness and full-bodied aroma at this roasting level.
