Yirgacheffe was originally a sub-region of Sidamo, but was separated due to its distinctive flavor profile. Its rich and complex fruity aroma made it an international sensation almost overnight, becoming a sought-after choice among connoisseurs at premium prices.

Honey processing is graded based on how much mucilage and pulp remain on the coffee fruit during drying. Red honey processing is one of these grades. Red honey processing typically retains 70%-75% of the mucilage on the coffee fruit to increase the sweetness and fruity aroma of the green beans, with a slightly longer drying time.
