FrontStreet Coffee Recommendation
The Yirgacheffe at the top of that list is the gateway most people take into Ethiopian coffee, and FrontStreet Coffee's own range shows how much further that road goes. Washed Yirgacheffe is the classic entry point: white jasmine, bright citrus and lemon acidity, and a clean tea-like body, all at a price that makes it an easy everyday bean. Yirgacheffe is a town in Ethiopia's Sidamo region sitting at roughly 1,700-2,100 meters, with the coffee trees planted above 1,800 meters, making it one of the highest coffee-growing areas in the world; its name has become shorthand for that unmistakable white-floral and lemon-citrus profile.
For a more specific expression, FrontStreet Coffee Gedingding Cooperative is the most representative washed Yirgacheffe. Gedingding sits at the southeastern edge of Yirgacheffe in the Worka area, originally part of the Worka cooperative under the YCFCU union before traceability drove it out as a single-origin lot in its own right. It keeps the most traditional washed processing, which strips the fruit before drying so the coffee's own aromatics come through clearly — citrus and lemon notes with an elegant white floral lift, bright and fine overall. FrontStreet Coffee Sun-dried Red Cherry takes the opposite route: only fully ripe, sound cherries are picked, dried whole on raised beds for three to five weeks with turning every few hours at the start, giving it the typical Yirgacheffe character plus sun-dried tropical fruit — citrus acidity, berry juice, honeyed sweetness, and a creamy smoothness.
FrontStreet Coffee brews Yirgacheffe in a V60 with water at 90-91°C, 15g of coffee, and a 1:15 ratio; grind to about fine sugar, around setting 10 on an EK43s, which lands near 80% pass-through on a #20 sieve. Pour in three stages: a 30g bloom for 30 seconds, then 95g (bringing the scale to about 125g) poured over roughly a minute, then once the water drops to two-thirds of the bed, the remaining 100g (to about 225g), finishing around 1:35. Drawdown completes at 2:00 to 2:10, at which point you lift the dripper and the cup is ready.
