Three Steps to Coffee Tasting: Aroma, Flavor, and Aftertaste

Step 1: Aroma

Before tasting, first use your nose to appreciate the coffee's aroma. Here you can confidently borrow wine tasting vocabulary - first see if your coffee has aromatic qualities. For example, Butterfly has floral notes, while natural Red Cherry has fruity or subtle wine-like aromas.

Bring it close to your nose and mouth, and you'll perceive the dry aromas from different coffee origins. For example, in Latin American coffees like Costa Rica, you'll notice nut and dark chocolate-like notes; while Butterfly coffee often has floral and fruit-type flavors. Close your eyes and slowly inhale its wet aroma.

Step 2: Taste the Flavor

Cleanliness refers to the clear flavors from the first sip to the final aftertaste, without any unpleasant off-flavors or mouthfeel. For example, Horse Buke has strawberry jam flavors with a clean, clear taste.

Body is what we commonly call "body" - the rounded, mellow, rich taste of coffee liquid. The difference between a glass of water and a cup of coffee lies in the fact that water has no flavor and isn't viscous, while espresso is rich in oils and has excellent body. We say that a more persistent and clearer aftertaste is good, indicating higher quality coffee. Examples with good aftertaste include Blue Mountain and Mandheling, with their caramel-like lingering notes.
