Cupping Notes

Cupping: (Roasted on Japanese Royal Fuji 1kg roaster, beans dropped at end of first crack, total roasting time 14 minutes)

Dry Aroma: Rich nutty sweetness with hints of longan's sweet-tart profile and toasted bread's sweet fragrance

Wet Aroma: Tea fragrance, stone fruit notes, and fruit's acidic aroma

Sip: Bright fruit acidity without harshness, immediately followed by sweetness. Clean flavor without the typical earthy or medicinal notes of Indonesian beans. Rich, velvety mouthfeel with a finish revealing sweet fruit and nut flavors - quite complex and rich.

Java Arabica Characteristics

Java Arabica is arguably the most precious among all Indonesian Arabica varieties. First, it's 100% wet-processed, unlike most semi-washed or Sumatra's unique natural Arabica varieties. Its flavor is clean with bright, charming acidity, without the harsh stimulating notes found in other varieties. However, it still maintains the consistent level of oil density and richness characteristic of Indonesian beans - which is quite remarkable. The common earthy and woody notes found in Indonesian beans are absent here. The Kayumas State Estate we just received this year is a perfect example!

This estate's coffee offers elegant aromatics with distinct nutty sweetness and rich fruit sweetness, actually resembling the aroma of premium East African beans. There's a significant difference in aromatic performance compared to premium beans from Sulawesi and Sumatra!
