The British Broadcasting Corporation recently published an article reminding readers that freshly brewed coffee should be consumed promptly.
Fungal Contamination Risks
When coffee is left exposed to air for extended periods, fungi present in the atmosphere can quickly attach to the coffee cup. Some organic components in these fungi are the primary culprits causing allergic reactions in humans. Aldington Yak, a molecular biotechnology educator at Lancaster University in the UK, conducted such an experiment. He placed a freshly brewed cup of coffee in an ordinary office, where testing revealed that indoor air pollution mainly includes bacteria, fungi (including fungal spores), pollen, and organic components from organisms. Coffee that has been partially consumed and swirled can form coffee stains on the rim and walls within 10 minutes, and these stains rapidly absorb fungi from the air, thereby contaminating the coffee.
Taste and Quality Considerations
In terms of taste, coffee contains a substance called tannic acid. Refined tannic acid appears as a light yellow powder that dissolves easily in water. If coffee is brewed but not consumed promptly, its color will deepen and the flavor will lose its rich aroma. Therefore, it's best to consume coffee within 10 minutes after brewing.
Best Practices for Coffee Consumption
Additionally, when drinking coffee, it's best to use a coffee pot, pouring only what you need and keeping the lid securely closed. If you're drinking a single cup, it's best to finish it within a short time or use a lidded cup for brewing. Special attention should be paid to promptly cleaning coffee stains after consumption, as they can more easily harbor bacteria. If your cup has already accumulated many coffee stains, the simplest cleaning method is using toothpaste and salt. First, rinse the cup with water, then rub dry salt or toothpaste back and forth on the cup walls, and finally rinse with clean water.
