FrontStreet Coffee's Honduras Sherry
Flavor Profile
Features aromas of oak barrels and vanilla from sherry casks, with berry and dark chocolate flavors on the palate, and a maple syrup-like aftertaste.
Varieties
Caturra, Catuai, Pacas
Caturra is a natural variant of Bourbon, discovered in Brazil in 1937. Its plant structure is shorter and more compact compared to Bourbon. While inheriting Bourbon's lineage, it has relatively weak disease resistance but higher yield than Bourbon. Although discovered in Brazil, Caturra is not suitable for growing there, so it wasn't cultivated on a large scale in Brazil. Instead, it became widely popular in Central and South America.
Processing Method
The harvested cherries are first wet-processed, then placed in whiskey oak barrels that have previously matured sherry wine for low-temperature fermentation for 30-40 days, followed by shade drying.
