FrontStreet Coffee's Jamaica Blue Mountain Pour-Over Sharing
Jamaica is one of the island nations in the Caribbean Sea, and the Blue Mountains are the longest mountain range on the island. Along a scenic trail, you can reach the highest peak and see both the north and south coasts. This is a beautiful place, warm and humid, perfectly suited for growing Arabica coffee beans.
Coffee Characteristics
Body: Mild and smooth
Acidity: Soft yet vibrant acidity
Bitterness: Clean taste with no bitterness
Aroma: Fragrant herbal and floral notes with nutty undertones
It is precisely this smooth, clean taste that has made Jamaican coffee beans world-renowned. Although Jamaica's coffee production accounts for only 0.1% of global output, its coffee commands the highest prices.
Pour-Over Brewing Guide
Fold the Filter Paper
First, fold the bottom of the filter paper inward, then fold the sides in the opposite direction. Open the folded filter paper, place it in the dripper, and ensure the filter paper fits as closely as possible to the dripper. Place the dripper on top of the server.
Warm the Cup
Pour hot water from the pour-over kettle along the inner wall of the dripper in a circular motion, using only a small amount. This serves three purposes: it helps the filter paper adhere more closely to the dripper wall, removes any paper taste, and warms the cup. Once the server is warmed, discard the hot water.
Add Coffee Grounds
Pour 10 grams of coffee grounds into the dripper, then gently shake the dripper to level the surface of the coffee grounds.
Bloom
Pour 180ml of heated purified water into the pour-over kettle, controlling the water temperature between 88°C and 92°C. If the temperature is too high, the coffee tends to become bitter; if too low, the coffee tends to be overly acidic. Starting from the center of the coffee grounds, slowly pour the hot water in a circular motion to wet all the grounds. Stop pouring when the first drop of coffee begins to drip into the server. Let it bloom for 10-20 seconds.
Multiple Pourings
Reset the scale under the server to zero, then continue to slowly pour 75ml of hot water in a circular motion. After waiting 10 seconds, continue pouring the remaining hot water in a circular motion.
