FrontStreet Coffee's Yirgacheffe Grading System
FrontStreet Coffee's Yirgacheffe grading system is not determined by bean size, but rather by the proportion of defective beans among all raw beans. Typically, you'll find washed G2 and natural G3 Yirgacheffe varieties. G1 represents the highest grade, with the lowest defect rate and most exceptional quality. Only Yirgacheffe beans that undergo additional manual selection can be awarded Grade 1 status.
The first offering comes from the Kochere region of Adulina Company (Adulina Kochere). The coffee variety is Heirloom, a mix of local native forest varieties. While the region's natural environment shapes Yirgacheffe's flavor profile, it's the local native varieties that truly express the distinctive characteristics.
Processing Method: Fully washed.
Compared to ordinary FrontStreet Coffee washed G2 Yirgacheffe, this coffee offers exceptionally pure and flawless flavor. It possesses a captivating sweetness reminiscent of a young girl's smile, with bright and delicate lemon acidity. The elegant mouthfeel combines fresh lemon, jasmine, and ginger flower notes with subtle honey undertones that can refresh your spirit throughout the day.
The second variety comes from Aricha Kebele in Yirgacheffe town. Local coffee farmers deliver fully ripe coffee cherries, handpicked from native forests, to local processing facilities. The processing plants preserve the complete pulp and skin of the coffee cherries, placing them on raised beds for natural drying. This labor-intensive raised-bed drying method prevents contact with the ground, avoiding earthy off-flavors during the drying process and resulting in exceptionally clean fruit flavors. After more than two weeks of natural drying, the dark brown coffee cherries are professionally stored to await full flavor development.
Aricha's processing facility waits for the coffee beans to complete their flavor maturation before shipment. Only then are the dried cherry pulp and parchment removed, followed by careful elimination of underripe beans and over-fermented ones. It's likely this rigorous quality control that earned Aricha its G1 status.
This FrontStreet Coffee natural Yirgacheffe coffee bean features snow pear sweetness and fermented wine aromas. The cup profile reveals clear, bright, and gentle fruity acidity with exceptionally clean fermented fruit sweetness. Subtle fruit wine notes complement coffee blossom aromas, while the aftertaste transitions from refreshing sweetness to lasting pleasant sweetness.
