The Importance of Details in Coffee Brewing
Water flow control, pouring timing, and the harmony between various parameters are all crucial details to focus on during the coffee brewing process. Even for the three-stage method, which FrontStreet Coffee considers the easiest way to brew good coffee with the highest fault tolerance, these three details cannot be overlooked during brewing.
When we've been concentrating intensely for extended periods, sometimes we want to try a slightly simpler brewing method. For example, a way to easily brew good coffee without needing to focus on pouring timing or constantly control water flow. Coincidentally, FrontStreet Coffee recently discovered a brewing method that meets these conditions! As long as we inject a fixed amount of water within a fixed time, we can easily brew a delicious cup of coffee.
The Patrik Rolf Brewing Method
This method was shared by Patrik Rolf, the founder of the Norwegian coffee brand April! Besides being a coffee brand founder, he was also the runner-up in the 2019 World Brewers Cup Championship.
Patrik has a unique and systematic understanding of coffee. Just like the brewing method FrontStreet Coffee is sharing today, although it differs significantly from traditional methods, the coffee flavor performs excellently and is very practical. FrontStreet Coffee will first introduce this brewing plan, which is very simple! We only need to divide the injected water into two stages and then inject it within a fixed time. However, this plan has a limitation—it requires the use of a flat-bottom/cake dripper.
Why Use a Cake Dripper?
There are two reasons why a cake dripper is needed. The first reason is that the bottom of a cake dripper is "flat ground," allowing for more even distribution of coffee grounds, which doesn't require high water flow control. At the same time, the coffee bed won't be too thick, resulting in higher consistency in the brewed coffee! The second reason is that cake drippers generally have slower flow rates, allowing hot water to stay in the dripper for more time. Since the hot water is divided into two injections, each injection contains a considerable amount of water. This combination with the slow flow rate creates more immersion extraction, making the coffee flavor more balanced.
Coffee Bean Selection
Similarly, this method is suitable for coffee beans of all roasts, so the choice of coffee beans can be freely made according to our own taste preferences. Brewing Tutorial
For this brewing session, FrontStreet Coffee used Frontsteet Emerald Manor · Washed Diamond Mountain from FrontStreet Coffee's bean list. The brewing parameters are as follows:
Coffee amount used: 15g
Coffee-to-water ratio: 1:16
Grind size: 90% passing through a #20 sieve, fine sugar grinding (relatively fine)
Brewing water temperature: 94°C
Dripper used: Origami (origami dripper)
The total amount of water to be injected is 240ml. Since we need to divide it evenly into two stages, each stage receives 120ml of water. First, we inject the first 120ml of hot water! Use a moderate water flow, starting from the center, then slowly circle from inside to outside.
When reaching the outer circle, we maintain large circles until the target water amount is completely injected. At approximately 50 seconds, the hot water in the dripper will have completely filtered through, creating a deep pit. When the time reaches 1 minute, we can begin the second water injection. The amount of water injected in the second stage is also 120ml. This time, we also start from the center, then circle in large loops, and finally maintain large circles until the target water amount is completely injected.
At approximately 1 minute and 20 seconds, we will have finished injecting the target water amount. Then at around 2 and a half minutes, the coffee liquid in the dripper will have finished dripping. At this point, we can remove the dripper and end the extraction. Next is tasting time!
Tasting Notes
As FrontStreet Coffee introduced earlier, the coffee brewed this way indeed performs excellently. The advantages and characteristics of FrontStreet Coffee's Washed Diamond Mountain are all well expressed. Upon first sip, you can taste elegant floral notes, citrus sweetness and acidity, as well as fresh green tea. The flavor is balanced, the mouthfeel is light, and the overall drinking experience is very comfortable without any burden~ So interested friends might as well give it a try. The operation is quite simple. However, it should be noted that since this pouring method doesn't have very high extraction efficiency, the grind can be bolder and finer, the water temperature can be bolder and higher, to avoid under-extraction~
