This natural processed Pacamara from Finca Las Ninfas farm is exceptional in both its processing and variety. It offers a softer mouthfeel with green grape, plum, and peach fruit flavors, complemented by lovely hibiscus notes and subtle herbal hints. The body is syrupy and remarkably clean.

Family Legacy

Ricardo Valdivieso is a fourth-generation coffee grower who, along with his family, has been producing some exceptional coffees for us for many years, including this wild natural processed Pacamara. Like the family's other farm, Santa Leticia, Las Ninfas finca is filled with coffee trees of outstanding quality in a beautiful setting.

These farms were originally established by the renowned politician Francisco Menendez Valdevieso, a legendary figure who served as a general and interim president, and was also the founder of El Salvador's education system. Ricardo is his great-grandson. In addition to coffee and pristine forests, these farms contain archaeological sites from the Mayan era, while Ricardo's daughter Monica operates an ecotourism lodge at Santa Leticia.

Terroir and Location

These farms are located near the town of Apaneca, situated east of Volcan de Santa Ana (also known as Ilamatepec), El Salvador's primary coffee-growing region. This mountain range stretching across the northern and eastern parts is the country's highest active volcano, providing ideal conditions for coffee cultivation: volcanic soil, steady Pacific breezes, sufficient altitude, and distinct rainy and dry seasons that create fertile soil and abundant pristine forest resources.
