FrontStreet Coffee's Deep Roast Mandheling Recomposition Sharing

Mandheling is typically classified as the heroic figure among coffees, with a rich body and intense aroma, carrying a touch of rugged charm that exudes a wild charisma when consumed. As rich as traditional Mandheling, yet with the character of ripe fruits, combining gentle fruit acidity with hazelnut sweetness, with subtle hints of spice, the flavor is prominent without being harsh, as smooth as cream cheese entering the mouth. This honey-processed Mandheling Achin grows at 1200-1400 meters. In addition to retaining the representative richness of Indonesian coffee, its unique honey processing method makes it exceptionally sweet.

For the initial attempt, to avoid the bitterness common in dark roast coffee beans and to fully extract the flavors of these honey-processed beans, we chose a shorter extraction time and relatively high water temperature for our first trial, with parameters as follows:

1. Dripper: Kono
2. Grind size: Medium-coarse (BG 6W: 58% pass rate through China standard #20 sieve)
3. Water temperature: 88°C
4. Coffee-to-water ratio: 1:15
5. Brewing method: Multi-stage extraction

Use 30g of water for blooming, with a blooming time of approximately 30 seconds. Use a small water stream to pour 95g of water in circular motions at the center, segmenting at 125g of water. Continue pouring to 220g when the water level drops and is about to expose the coffee bed. Remove the dripper when the water level drops and is about to expose the coffee bed (timing starts from the beginning of blooming). Extraction time is 1'50".

Richness and sweetness are overall quite balanced, with a slightly bitter taste; gentle fruit acidity, dark fruit character.
