FrontStreet Coffee's Introduction to Ethiopian Geisha
Geisha, the "new favorite" among specialty coffees, has been showing remarkable popularity in recent years. Not only did it fetch astonishing prices in two consecutive estate independent auctions, but it has also been chosen by multiple contestants in top-tier competitions like the WBC, bringing Ethiopia, the kingdom of coffee, back to its peak. As Geisha has been dominating coffee conversations, in the eyes of coffee enthusiasts, Geisha is undoubtedly a well-deserved goddess. Many people are captivated by its bright, complex floral and fruit aromas, multi-layered high-sweetness fruit notes, and delicate, soft acidity.
Harvesting and Processing Methods
With the support and cooperation of local residents, they have successfully trained a group of high-level pickers and processing plant workers.
"Pick only the most mature coffee cherries," "don't take any that have fallen on the ground or are spoiled" - these are the requirements that every worker is instructed to follow, while harvesting mentors will teach workers what coffee looks like when it's most mature and what cherries are spoiled.
Adam has his own understanding of coffee processing methods. The main processing methods for Geisha Village's green coffee bean production are high-quality natural and washed processes to highlight its terroir characteristics. At the same time, Geisha Village is also experimenting with various processing methods, including dry fermentation, wet fermentation, and various honey processing methods.
Geisha produced in Geisha Village has smaller green beans compared to those from Panama. Washed Geisha green coffee beans have a beautiful blue-green color, while natural processed Geisha green beans have a beautiful green with slight yellow tones, possessing a jade-like warm texture. They smell like fresh grass, peaches, berries, and have a unique milky sweetness characteristic of oolong tea that most coffee beans lack. It seems that aroma and flavor require association and imagination, but we can clearly sense the faint tea notes. The rich floral aromas and intense sweetness of tropical fruits are consistent characteristics of Geisha.
